Grandma Wilda's Jello Salad

2 small boxes of Green Jello or 1 large Box
1 Can 20 oz of crushed pineapple
2 TBSP Pineapple juice
6 oz Cream cheese
8 oz. Cool Whip
2 C Boiling water
1/2 to 3/4 C chopped walnuts

1. Bring 2 C water to a boil. Stir in Jello until dissolved. Add cream cheese and pineapple juice. Stir until cream cheese is dissolved.

2. Chill for 1 hour. Drain pineapple. Add pineapple and Cool Whip to the Jello. Top with chopped walnuts and chill until firm.

My grandmother always makes this in a 9 by 13 Tupperware container. I couldn't make it until I got a Tupperware container of my own ;-)

Grandma Eva's Baked Beans

1 pound dried beans
1 C Onions
1/2 pound bacon diced

1 C brown sugar
1 tsp salt
1/4 tsp pepper
1/4 to 1/2 C molasses (more or less to taste)
1/2 C ketchup (just eyeball it.)

1. Soak beans overnight according to directions on the package. Drain and rinse the next morning.

2. Place beans in a 3 qt oven safe dish. Bake for 1.5 hours at 350 degrees F or until beans are soft and split their skins.

3. Add ketchup, brown sugar, salt, pepper and molasses. Bake for an additional 3.5 hours. Until beans are thick.

Grandma Wilda's Broccoli Salad

1 bunch of Broccoli cut small
1/2 Red Onion
1/2 pound Bacon cooked and crumbled
1 Cup shredded Cheddar Cheese

Sauce:
1/2 C mayonnaise
1/4 C sugar
1 TBSP Vinegar

1. Mix mayo, sugar, and vinegar and set aside.

2. Just before serving, mix dressing and other ingredients. Serve and enjoy!

To double this recipe, only double the amount of Broccoli, onion, and cheese. For the sauce, doubled: 1 C mayo, 1/4 C sugar, 2TBSP vinegar.

Hamburger and Hot dog Buns

1/2 Cup Water
1/4 Cup melted butter or oil
4 1/2 Cups flour ( I use a blend of all purpose and whole wheat)
2 1/4 tsp yeast (1 envelope)
2 TBSP Sugar
1 1/2 tsp Salt

1. In Kitchen-Aid mixer combine flour, yeast, sugar, and salt. Mix to combine. While mixer is going, add liquid ingredients. Knead for 8-10 minutes.



2. Grease dough and let rest for 30 minutes.



3. Divide dough into 12 equal pieces. Shape into smooth balls, flatten and place on a greased baking sheet. FOR HOT DOGS: divide dough into 16 pieces and shape into hot dog shaped rolls. Start with a hot dog size and it will raise to the perfect size for the hot dog.



Bake at 400 degrees F for 10-12 minutes or until golden brown.
